Family

As I sit here in my warm and comfy bed listening to my dog snore I realize that I am a very lucky woman.  I have a wonderful husband, two fantastic kids, and a life that is hectic but completely worth every minute.  I really should be doing my homework, but my mind keeps wandering away from my studies.
My daughter is a teenager, but you would think she is an adult, completely independent, and even my son is starting to follow in her footsteps.  I realize that I am 34 and soon will be 37 with a daughter in college and a son in high school.  I don't know what happened but somewhere along the way they grew up.  I can't believe it.
My daughter and I sit and look at colleges together and I just want to stop time and say NO, she isn't going to go.  The reality is she will go and my son will follow 4 years later.  My husband and I have big plans for when my kids are all grown up, but it doesn't make it any less harder.

Busy Busy Busy is an understatement. Since my last post I have become even more busy which I wasn't even sure that was possible. Both of my kids have become so busy between sports and school. I feel like I am floating in the game of life. My husband is still in school and working full time, and I am working part time while also in school. There are so many journeys for me to follow i am just unsure which ones to take. Today I got a phone call at work telling me that my youngest is sick at school, he was supposed to be at a basketball game tonight and has baseball practice tomorrow, but I am thinking he won't be going to either. Darn this flu bug. This weekend is going to interesting to say the least. With finals coming up in school I will need to find the time to run my daughter around to her sports while studying. If anyone has any healthy quick recipes feel free to share because I am in need of some desperate ones.

Spring is here. I am so excited the kids can actually play outside. We just moved and the kids love the new place. If it is sunny outside they are out there playing, kicking around the soccer ball, playing catch, rolling in the grass you name it they do it. Trying to find something fun to do on these days is very simple. The weekends are going to be reserved for bike rides and picnics. So I figure during the busy week they are just going to have to use their own imaginations. Which of course children have a ton of.

Try this easy recipe on one of those busy nights

SOUTHWESTERN BEEF AND BEAN BURGER WRAPS
4 servings

What you need:
12 ounces 93%-lean ground beef
1 cup refried beans
1/2 cup chopped fresh cilantro
1 tablespoon chopped pickled jalapenos
1 avocado, peeled and pitted
1/2 cup prepared salsa
1/8 teaspoon garlic powder
4 whole-wheat tortillas, warmed (see Tip)
2 cups shredded romaine lettuce
1/2 cup shredded pepper Jack cheese
1 lime, cut into 4 wedges

Directions:
1.Position oven rack in upper third of oven; preheat broiler. Coat a broiler pan with cooking spray.
2.Gently combine ground beef, beans, cilantro and jalapenos in a medium bowl (do not overmix). Shape into four 5-by-2-inch oblong patties and place on the prepared pan.
3.Broil the patties until an instant-read thermometer inserted into the center reads 165°F, 12 to 14 minutes.
4.Meanwhile, mash together avocado, salsa and garlic powder in a small bowl.
5.Place tortillas on a clean work surface. Spread each with the guacamole, then sprinkle with lettuce and cheese. Top each with a burger and roll into a wrap. Serve immediately, with lime wedges
